So much anime, so little time. I'll list my top 5 wanna watch titles:
Grave of the fireflies
Last Exile (whole series)
Final Fantasy Unlimited (whole series)
Gungrave (whole series)
and Bleach (I have no idea how long the series is, but I wanna watch it all eventually)

Grave of the Fireflies is excellent - but it is also very tragic. I loved it but I don't watch it often.

There are tons of anime that I'd label a "must watch". The rest of the stuff I'm currently seeing (see sig), plus stuff like XXXHolic movie, Tsubasa movie, Pocket Monsters 8 movie, Whisper of the Heart, Only Yesterday, Ocean Waves, anything else Ghibli, Hols Prince of the Sun, Saikano, Naruto, In the Beginning, D.N.Angel, The Big O, Get Backers, Piano, .hack//SIGN, Wolf's Rain, Last Exile, Full Metal Panic, Full Metal Panic FUMOFFU, I could go on all night. XD
