Mm, I suppose this could belong in the Tutorials forums, but I'm not really asking for help. I think... Feel free to move if I'm wrong! XD

Anyway, I've been getting more and more interested in cooking these days; and one thing I've been aching to make is noodles. I've already done a bit of researching into Japanese and Korean noodle recipes, but I'm truly a novice when it comes to this.

So! Do any of you wonderful CAA'ers have any recipes to share? ;D

http://www.justhungry.com/noodles ---> there are some promising looking recipes there, though I haven't had the chance to try them myself. :3 They have some of my favorites. If you're looking for Japanese noodles, I'd definitely recommend cold soba/zarusoba. If you have an asian market nearby, the ingredients are pretty easy to find, and the recipe is really simple.

New Year's soba is also amazing. And udon. And basically any Japanese noodle you can get a hold of. And most of them (apart from ramen) are pretty easy to put together.

Debitt, I think BubblegumNinja is looking for actually noodle-making recipes rather than noodle dishes. I could be wrong, though. That's an interesting site, BTW.

I can pull off a decent egg-noodle (the kind you use for goulash and casseroles) but I've never been able to come up with my true goal, a noodle that comes out like instant ramen noodles! Really, those are like the best soup noodles and bed noodles (meaning noodles you serve other things on top of) ever, and I just can't reproduce them.

Thisiskris: Make small portions for yourself, then let the aroma gradually hook 'em. Really, a good yakisoba or udon bowl or such is a difficult smell to resist in the long run.

A few tricks on noodles.

1) Like most other things, wheat noodles are better then regular ones. They taste a little different and are slightly more pricey, but ultimately better for you.

2) If you don't wash off the noodles after you've cooked them, they contain extra starch which if you leave it on, also changes the taste but fills you up more (that way you don't have to eat as many noodles to feel full). It also saves you the hassle o straining and washing the noodles.

Just two small things I've learned over the years, although I generally apply them to pasta dishes and not Asian cuisine.

Ahhahaha, I was wondering what they were actually asking for. XD; But if they want actual noodles, I think the link I posted has a recipe for udon noodles!

Nah, Debitt had it spot on (: I love pasta so I'd love to learn a variety of different dishes. I'm sorry if I was unclear >.<!

And thank you for the link! Unfortunately I can't seem to get most of the stuff here (we live in a small village so the range of food is limited), but next time I travel to England I'll be sure to hunt down all the right ingredients! (x

Basically, rinsed noodles for Asian cooking, unrinsed noodles for Italian cooking.

(In Italian, you want the starch coating left on the noodles, because it helps your sauces stick to the noodles!)

(My theory is that Asians rinsed the starch off because it is darned hard to eat noodles that are sticking together when you're using chopsticks!)

I've heard that you rinse for cold dishes such as pasta salad and don't rinse for hot dishes.
Oh yeah, and authentic ramen is amazing! If you try to make it, chances are there will be a lot.

Good point. Yes even in European cooking you rinse noodles if you are going to serve them cold. If you have ever kept leftover spaghetti noodles in the fridge and discovered them all sticking together the next day, you can see why you need to do that.

We have a hole-in-the-wall Japanese place here in Dallas that serves real ramen (and yakisoba and Japanese croquettes too!) I go there once a week for lunch.

I actually have a Thai,Korean, Chinese, Japanese recipe book that I believe has alot of noodle recipes. I love rice noodles, those are some of the best to make. Unfortunately, eheh I lost the book. :sweat:

Experiment!

It's a great way to cook!

One thing to remember with noodles though, if you aren't going to rinse them off you should probably pull them out a little before you think that they are done, because they still cook for a while outside of the water. It's not as important if you're cooking for yourself, but if you're cooking in bulk it's something to remember.

lol, sorry lady rushia. I sorta got a little distracted and wanted to post something funny. ^^ anyway, what kind of noodles do you like the most nin-chan? I like miso pork myself. O_O OOOO and chicken. I LOVEEEE CHICKEN!!!!!

Alrighty then!
[SIZE="4"]
Thai Chicken Noodles

2 tablespoons soy sauce

2 tablespoons water

1 tablespoon peanut butter

1 tablespoon honey

Juice of 1 lime

1 tablespoon minced ginger

2 cloves minced garlic

1/2 to 1 teaspoon red pepper flakes

1 tablespoon vegetable oil

4 boneless skinless chicken breasts (about 1 pound), cut into 1 inch pieces

1 cup snow pea pods

8 ounces uncooked linguine, cooked and drained

Chopped Peanuts, fresh cilantro and lime wedges

Step 1

Combine soy sauce, water, peanut butter, honey, lime juice, ginger, garlic and red pepper flakes in small microwavable bowl. Microwave on HIGH 30 seconds]Step 2[/B]

Heat oil in large nonstick skillet or wok over medium-high heat. Cook and stir chicken 5 minutes or until cooked through. Add pea pods; cook and stir 4 minutes. Add cooked noodles and sauce to skillet; toss to combine. Cook until heated through. Garnish as desired.

It makes around 4-5 servings.
