The more I think about the Force-users in Star Wars, the more I am reminded of samurai-era Japan. Palpatine seems almost like an intergalactic Nobunaga Oda to me. But I don't know a ton about Japanese history, so I could be off a bunch.

It's pretty well known that Japanese film had a big influence on Star Wars. The first movie is liberally based off of The Hidden Fortress by Kurosawa. All the way down to the young samurai hero rescuing a princess from an evil swordsman, with two bumbling sidekicks.
So yes the whole Jedi thing was based off of samurai.
Well I wouldn't really put it like Oda Nobunaga was evil or anything. I mean every clan throughout Japan's history butchered eachother and their citizenry.
