Spiritual warfare in what sense? Human or metaphysical? (I mean having do with supernatural entities, of course, as humanity's spiritual warfare is obviously also metaphysical) That will very much change the response.
However, if you are talking about the latter, I'm afraid the truth is that you will find fairly little in terms of things that will help you write fiction.

well, when I write all the stuff down (being fiction and all) it's supernatural/fantasy-ish but I want information, quotes from the Bible, etc. that are real so, I don't know what I necessarily want, but I do want any recommendations for books/sites/quotes/etc.

If your looking for detailed information about spiritual warfare in the Bible, you won't find much. Here are a few passages that might be helpful:
Ephesians 6:12
Revelation 12
Matthew 8:28-34
Daniel 10:12-13
James 2:19
I can't recommend any books to you (unless you are interested in fiction writers who have dealt with the subject), but those verses should at least give you a starting point.

It really depends on how gnarly you want to get. A really good author on the subject is Charles Kraft (a professor from Fuller Theological Seminary-and he teaches the subject in question). He's pretty solid, but tends to be, I don't know if light-hearted is the right word.
If you want to get really intense, and I mean, like, don't let children or people who are not interested in actively pursing spiritual warfare read it, then a book called Hostage to the Devil by Malachi Martin is the way to go. It's not something to read in the dark or near a red candle though, and I'm only half joking. He got all of his information from Jesuit Exorcists (either first, or if the priest died during the exorcism, then second hand).
Hope that helps.

You didn't really answer my question, but you may have by association. That is, if you are wanting to write fantasy-esque material I doubt this will be about people praying. If you truly want websites, I'll give you what I can.
The following is a fairly in-depth Catholic article, but it won't give you everything you want. Follow the links to other articles as well and you can probably find most of what you want.

This at least has a lot of information and verses, though I won't vouch for the theological standings of the writers:
